I know that zucchini and brownie are an unlikely combo and there is no way for me to prove to you that this recipe is delicious without you trying it. This is not a propaganda campaign (everybody must try zucchini brownies or else! ; )) but if you don’t try these, you might be missing out on something good!

What You’ll Need

  • 1 cup almond butter
  • 1 1/2 cup skinned, seeded and grated golden zucchini
  • 1/3 cup agave

  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 teaspoon cocoa powder
  • 1 teaspoon ground espresso (add 1/2 teaspoon more for stronger flavor)
  • 1/4 teaspoon salt
  • 1 cup vegan semi-sweet chocolate chips

Instructions

  1. Heat up your oven to 350.
  2. Mix all ingredients in a large bowl.
  3. Pour into a greased 9×9 baking pan.
  4. Bake 25-30 minutes or until you can see it’s ready
  5. Let it cool down, cut into squares and enjoy!
